One of the best things about living in Galicia this month is the food. More specifically, pulpo a la gallega — Galician style octopus.

One of the best things about traditional Spanish food is its simplicity. The pulpo ,which is boiled and served with potatoes, is seasoned with Spanish paprika and olive oil. It’s uncomplicated, and it’s wonderful.

And served with a glass of albariño, a sweet white wine made in Galicia, it’s the perfect meal.

Cheers to spending a cold afternoon safely tucked into a warm restaurant with the best pulpo I’ve ever had.
